What is the Pacojet 2 and what is it used for?
The Pacojet 2 plays a crucial role in high-quality kitchens: pacotizing. That is, micro-pureeing various foods into purées, mousses, and pâtés, and emulsifying sorbets and ice cream directly from a frozen base. This process allows you to work directly with frozen foods without defrosting, ensuring a smooth and creamy consistency while preserving flavors and nutritional values.
The Advantages of the Pacojet 2
-
Speeds up workflow. With the Pacojet 2, you can prepare mousses, pâtés, ice cream, or sorbets while eliminating defrosting time. You can prepare ingredients in advance, place them in the stainless steel beaker, and freeze them. Once frozen, you can either pacotize them immediately with the Pacojet 2 and serve them or store them in the freezer for later use. The Pacojet 2 operates at temperatures between -18°C and -22°C, preserving nutrients and organoleptic properties. During pacotizing, the product is brought from -20°C to -12°C in seconds due to the high-speed blade.

Reduces waste. The ability to determine exact portions to prepare ensures that you never have to discard excess product.
-
Suitable for both hot and cold preparations. Depending on your restaurant's needs, you can use the Pacojet 2 for a variety of recipes.

-
End-of-day cleaning: Essential for keeping the device in perfect condition. This involves rotating brushes immersed in water and vinegar or disinfected in the stainless steel beaker.
