This new generation commercial gas direct steam oven with touch panel is ideal for restaurants thanks to the 1/1 gn (53 x32.5 cm) trays.

Complete with automatic washing system and multi-point core probe as standard.

Features of the commercial direct steam gas oven CHF1111TOP-GAS

  • Manufactured in Italy. The cooking chamber, crafted from AISI 304 10/10 stainless steel, features a stamped bottom and fully rounded edges. The inner glass door is removable and heat-reflective, simplifying cleaning. The IPX3 certification ensures protection against water splashes, while the CB certification guarantees the professional oven's safety and quality standards.
     
  • Gas Convection Oven. A professional gas convection oven offers faster cooking times and even heat distribution compared to traditional ovens. The built-in bidirectional ventilation motors enhance the crispness of foods. (Methane tested, LPG version available upon request)
     
  • Direct Steam. The professional gas oven allows for precise steam control via a 10-step touchscreen panel. Steam control is invaluable for cooking foods like fish, bread, or pastries. Direct steam prevents food from drying out during extended cooking, preserving freshness and juiciness.
     
  • Operating Temperature. The commercial gas oven enables temperature regulation between 30°C and 260°C, facilitated by a user-friendly 7” color touchscreen capacitive panel.
     
  • Dimensions. With a width of 73 cm, a depth of 84.9 cm, and a height of 123 cm, this 11-tray professional gas oven is compact yet versatile. It includes 4 adjustable feet and can accommodate up to 11 GastroNorm GN 1/1 trays. A condensate collection tray with a door drain is included.
     
  • Innovative Technologies. Airflowlogic, a patented technology, optimizes cooking uniformity throughout the oven by strategically circulating air. Humilogic ensures high humidity levels for quality steam cooking by injecting water directly into the fan, reducing energy consumption. Drylogic rapidly dries the cooking chamber, delivering exceptional results.
     
  • Door and Control Panel. The reversible door with a disappearing hinge (optional) can be fixed at various angles. The digital panel offers a range of features, including preheating, maintaining, rapid cooling, USB connectivity, and recipe storage for up to 500 programs.
     
  • Additional Features. Enjoy 5 fan speed settings, 10 cooking phases per cycle, and multi-level cooking for simultaneous preparation of dishes with varying cooking times and moisture levels. The oven also supports sous vide cooking and offers humidity management software.
     
  • HACCP and Safety. The built-in HACCP system monitors and records critical food safety data. Remote updates and programming are possible via Wi-Fi.
     
  • Convenience and Precision. The multi-point core probe ensures precise temperature monitoring, while the automatic cleaning function simplifies maintenance.
