Features of the commercial electric direct steam oven CHF1111TOP

  • Made in Italy. The technology, design, and production are entirely MADE IN ITALY. The manufacturing materials, such as AISI 304 10/10 stainless steel for the cooking chamber with a stamped chamber bottom and fully rounded edges. This ensures impeccable service for your establishment over time. Water protection, IPX 3, IPX 4, and IPX 5, with CB certification.
  • Electric Convection Oven. A convection oven is a type of oven that utilizes a fan to evenly distribute heat throughout the cooking chamber. This forced ventilation allows for faster and more uniform cooking compared to traditional ovens. The circulation of hot air helps reduce cooking times and can also enhance the crispiness of foods, thanks to the pre-installed bidirectional ventilation motors.
  • Direct Steam. Direct steam can be set through the touch screen panel in 10 steps. This mode adds a controlled level of direct steam inside the cooking chamber, which can be particularly useful for cooking delicate foods such as fish or for maintaining the softness of baked goods like bread and pastries. Direct steam can also help prevent dehydration of foods during prolonged cooking.
  • Operating Temperature. The oven is programmed to set the temperature from 30°C to 270°C, thanks to the 7-inch color capacitive touch screen panel.
  • Dimensions. The oven has a width of 73 cm, a depth of 84.9 cm, allowing for easy placement even in tight spaces, and a height of 113 cm. The included guides can accommodate up to 11 trays of the standard GastroNorm GN 1/1 size. 4 adjustable feet are included.

  • Licenses. Airflowlogic is the patented technological innovation that, thanks to a completely redesigned casing and a deep study of air recirculation inside the oven, allows for achieving optimal results in cooking uniformity across all areas of the oven. Humilogic, a new patented system with the insertion of water directly into the back of the fan, ensures high levels of humidity in the cooking chamber for quality steam cooking and a reduction in consumption. Thanks to the patented rapid drying system of the cooking chamber, Drylogic, excellent cooking results are achieved. The technology operates by introducing air from the external environment into the oven to reduce the humidity present inside the cooking chamber.

  • Easy Cleaning. Smooth surfaces and the absence of hidden corners make cleaning and sanitizing the oven easy, ensuring a high level of hygiene. The inner glass is openable, allowing for cleaning without the risk of breakage. Condensation collection tray with door drainage.

  • Door. Reversible door with concealed hinge (Optional), door lock at 60°, 90°, 120°, and 180° opening, openable and easily cleanable internal thermo-reflective glass to reduce energy consumption. With the oven in operation, the internal light remains always on.

  • Digital Panel. With a wide range of features that make it extremely versatile and practical for cooking in the kitchen. Programmable delayed start up to 24 hours. Preheating allows you to bring the oven to the desired temperature before starting the actual cooking, ensuring better results and more precise cooking times. Keep Warm function maintains food warm after cooking without further cooking it, useful for serving the meal at the ideal temperature. Rapid Cooling, a useful function to quickly lower the oven temperature after cooking, helping to avoid overheating or making the oven ready for another cooking session. USB port allows connecting USB devices to the digital panel, potentially for software updates and recipe storage. Quick management of the most frequent recipes, with up to 500 programmable options.

  • Plus. 5 ventilation speed settings, 10 stages for each cooking cycle, multi-level cooking mode allowing simultaneous cooking of dishes with the same level of humidity and temperature but different cooking times. It also includes sous-vide cooking management and humidity control software.

  • HACCP. A dedicated food safety system that helps monitor and record critical data related to food safety during the cooking process. It enables updates and programming through Wi-Fi connectivity.

  • Probe and washing system. Standard multipoint core probe to monitor internal temperature during cooking, ensuring uniform and safe results. The automatic washing system simplifies maintenance by allowing automatic washing without requiring manual intervention.
