This commercial blast chiller and freezer with 5 trays, made of stainless steel, allows you to blast chill various types of food, bringing the temperature in the core of the food from 90°C to +3°C in a maximum time of 90 minutes for positive blast chilling and to -18°C in 240 minutes for negative blast chilling.

Features of the CHABB5TGP+RUO+3BA11 5-Tray Blast Chiller for Restaurants, Sushi, and Pastry

  • Door with alarm and micro-magnetic sensor. The professional 5-tray stainless steel AISI 304 blast chiller is equipped with an alarm system that alerts you when the door is open, ensuring the internal environment maintains its optimal temperature. The integrated micro-magnetic sensor automatically stops the fan when the door is opened.
  • Anti-condensation plastic Thermal-Breaker. This feature is integrated into the professional blast chiller and is specifically designed to prevent condensation from forming on the exterior surface, ensuring a safer and cleaner environment. Additionally, the heating wire can prevent the formation of ice or condensation, maintaining a consistent internal temperature and prolonging the life of the removable gasket.
  • Core probe included. The core probe is essential for preventing bacterial growth and preserving food freshness. It allows the chilling process to be automated and monitors the internal temperature of the food, ensuring optimal results.
  • Eco-friendly. The professional blast chiller uses R290 gas, known for its excellent refrigerant performance and minimal environmental impact. The 6 cm insulation helps maintain the cold within the chamber. Removable magnetic gaskets ensure the blast chiller is properly sealed, enhancing the machine's energy efficiency.
  • Treated evaporator. The evaporator has an anti-corrosion coating to ensure the safety of the products inside and to protect the machine from damage caused by evaporator punctures.
  • Ventilated refrigeration. Cold air circulates evenly through the slots in the blast chiller’s drop ceiling, ensuring uniform temperature distribution throughout the machine.
  • Defrosting by stop. During the device's normal operation, the compressor remains active while the refrigerant flows through the cooling system to maintain a consistent internal temperature. Over time, ice or frost may accumulate on internal surfaces, compromising cooling efficiency. To address this, the defrosting by stop system momentarily halts the compressor's activity. During this phase, the internal temperature slightly increases, allowing the accumulated ice or frost to melt.
  • Automatic preservation mode. This mode automatically activates at the end of the chilling cycle (infinite cycle). It offers peace of mind, as there is no need to manually monitor or adjust the temperature after chilling. Additionally, the temperature is maintained at a constant pre-set level for the time necessary to preserve the quality and organoleptic characteristics of the food. This ensures prolonged freshness of the chilled food, avoiding waste and spoilage.
  • Chilling speed. This professional blast chiller can reduce food temperature from 90°C to +3°C in 90 minutes in a positive chilling process. Additionally, in a negative chilling process, it can reduce food temperature from 90°C to -18°C in 240 minutes. The chilling capacity is 15 kg, while the freezing capacity is 10 kg.
  • Dual-function tray holder. The chamber can accommodate 5 GN 1/1 trays/racks or 5 EuroNorm 60x40 trays/racks, making it ideal for pastry applications as well. Includes 3 Gastronorm 1/1 trays, 2 cm height.
  • Display. The blast chiller's integrated electronic panel provides an intuitive interface for precise control and detailed monitoring of operations. Any issues can be quickly addressed thanks to the warning messages that the display can communicate. The end-of-cycle buzzer provides clear and immediate notification when the cooling process is complete. Additionally, the display offers advanced features such as ice cream mode and Frost Boost mode, which allows chilling temperatures to reach as low as -40°C, ensuring maximum freshness and quality of your products.
  • Wheels included. Includes 4 wheels: 2 wheels without brakes and 2 wheels with brakes.
