How do you use the industrial bratt pan?

Food placed in the bratt pan undergoes high-temperature roasting with minimal fat before being cooked in moisture with the addition of wine, water, or broth. Throughout the cooking process inside the industrial bratt pan, the lid remains closed to retain vapors and juices.

What can you cook in the commercial bratt pan?

Power supply: Decide whether to opt for a gas or electric bratt pan.

Gas bratt pans:

In gas bratt pans, the tank is heated by burners in direct contact with the bottom. Temperature adjustment ranges from 100°C to 300°C via a knob. 
 
Safety features include a thermostat with a thermocouple that prevents gas leakage if the flame extinguishes. Please note that by law, installation of the chimney and extraction hood is necessary to use the gas bratt pan.

Electric bratt pans:

In electric bratt pans, the tank bottom is heated by armored resistors, with temperature adjustment from 45°C to 300°C. 

A safety thermostat prevents the bratt pan from exceeding excessively high temperatures that could damage internal components. While installation of the extraction hood and chimney is not legally required for electric bratt pans, consulting the relevant ASL (Local Health Authority) is advisable.
